If you want to set the delivery date, you can go to Printing Option in the setting of Online Design,

If the online shop is closed on some days, how I can exclude this days for delivery on printing options?

You can go to the back-end > Printing option. After that you will be able to choose which day you want to show/ not show in the front-end.
